Yeah wrapping it makes the bark real soft. Maybe throw it on a hot grill before the "cool down" for 5 min or so to crisp it up??

ive wondered if you smoked slow and low for about 4hrs then finish
in an oven.

I do brisket this way, smoke for 6 - 8 hours and finish in the oven. Long enough on the smoker will dry it out, unless you're up all night basting it.

it is a process but when done right man its good.

what sauce you got? honestly some tabasco and sliced pickle has been good.

I seperated the fat from the cooking juice, and right now thats it. I made a big-ass sandwitch for dinner, and added some sauce while heating it up. Sweet Baby Rays, don't remember which one, but it was good.

Yesterday's 4th dinner was smoked brats, beans, tater tots (in the air fryer) and a touch of salad. The air fryer is wonderful for tots.

And in the afternoon I followed my 4th of July habit by watching Yankee Doodle Dandy, a wonderful movie that won 3 academy awards. Jimmy Cagney was magnificent!
