There's also gazpacho, a cold soup originating in Spain.
An old coworker did an internship there, and said it would be served as a drink (think thick bloody Mary without alcohol)

That's the purpose of both the vichyssoise and gazpacho.you think cold would work in the summer days? i mean if the flavors are there.

Makes sense.Apparently, the chef that came up with it, was working at the Ritz-Carlton, used his mom's potato and leek soup recipe, then cooled it down with milk, in order to server it during warmer, summer months.
