Mini roasts were on the smoker about 4 hrs. I wrapped them in foil, and will cook another 4-5 hrs @ 275 in the oven, then let them cool down very slow. (Turn off oven & wrap with a large towel and leave in oven for another hour or two)

Yeah, over time they got worse and worse. There's a "hex" area right under the dial, I'll either adjust it or break it after I get the replacements.

That’s what I was wondering with my calibration comment. The hex screw will often rotate so that you can calibrate it. In this instance you’d have to use boiling water and get a reading close to 212.Yeah, over time they got worse and worse. yeah sometimes others claim extreme heat and i don't notice. i have been surprised a few times though.

It's more of that vinegar "bite" like Tabasco, but you still get pepper flavor, rather than just straight vinegar.
